Chef Nino Di Costanzo, a culinary luminary celebrated for his artistry and innovative spirit, is poised to enchant guests at the Blu Beach Club, located within the Four Seasons Resort Maldives at Landaa Giraavaru. Beginning November 2024, Chef Nino will bring the culinary excellence of his acclaimed two-Michelin-star restaurant, Danì Maison, to this idyllic setting in the Baa Atoll UNESCO World Biosphere Reserve.
Chef Nino’s philosophy centres on creating memorable dining experiences that evoke emotion and connection. “People visit a restaurant because they want to experience something memorable – a story, a feeling, a connection,” he notes, emphasising the importance of sensorial interaction in his culinary approach. This collaboration represents a unique cultural exchange, blending the rich culinary traditions of his native Ischia with the lush produce of the Maldives, creating a harmonious dialogue between two vibrant island cultures.
During his residency, Chef Nino will not only showcase his signature dishes but also work closely with the culinary team at Blu Beach Club. Four members of the Blu team have already undergone training at Danì Maison, gaining insights into Chef Nino’s innovative techniques. This knowledge-sharing is fundamental to the collaboration, with Chef Nino stating, “The only way to move forward with anything that is different or out of the box is for the learning to come from both sides and for it to be collaborative.”
Guests will have the opportunity to indulge in Chef Nino’s extraordinary gastronomy during two week-long residencies: the first from 11-17 November 2024 and the second from 13-19 February 2025. In addition, after these events, Blu’s chefs will continue to serve a meticulously curated menu conceived by Chef Nino, available to just two tables of four each evening, ensuring an intimate dining experience.
Central to Chef Nino’s success is his meticulous artistry. He approaches each dish not only with attention to taste but also with a vision of the emotions he wishes to evoke in his diners. His creative process begins six months in advance, as he envisions the experience of each dish, considering every detail, including the choice of plate, many of which he designs himself from materials like Venetian glass and Italian ceramic.
Sourcing local ingredients is also a vital aspect of Chef Nino’s culinary philosophy. He plans to utilise the abundant herbs and vegetables from Landaa’s gardens, merging these with the Mediterranean culinary traditions for which he is known. This commitment to collaboration and local sourcing adds a layer of authenticity to the dining experience.
Chef Nino’s culinary journey began in the picturesque landscape of Ischia, where he was surrounded by the region’s vineyards and olive groves. His family’s fishing and farming heritage instilled in him a deep appreciation for quality ingredients and fine dining from an early age. This foundation has propelled him to directorships at renowned global restaurants before establishing his celebrated Danì Maison, where he has redefined Campanian cuisine in a setting that reflects his family’s artistic and natural legacy. Since its inception in May 2016, Danì Maison has received accolades, including two Michelin stars and recognition from prestigious culinary guides.
