Since taking over in March 2023, Simon Rogan, alongside Executive Chef Oli Marlow, has brought his celebrated culinary philosophy from his three-Michelin-starred restaurant, L’Enclume in the UK’s Lake District, to the Maltese shores. The menu at ION Harbour is a testament to this ethos, showcasing hyperlocal, seasonal ingredients that are ethically and sustainably sourced from the best producers in the region. Signature dishes such as truffle pudding glazed in carob molasses, smoked eel with caviar and ferments, and caramel mousse with white miso cherry plum highlight the restaurant’s commitment to excellence and innovation. Every detail, from the sourcing of ingredients to the presentation of each dish, reflects a deep-seated dedication to environmental responsibility and ethical practices.
The restaurant’s commitment to sustainability is further reinforced through the collaboration between the culinary team and the Head of Sustainability, Keith Abela. A specialist forager and university lecturer, Abela guides the team on foraging trips, educating them on indigenous and invasive species and their respective growing seasons. These excursions play a critical role in the creation of ION Harbour’s innovative and sustainable menus. The restaurant’s dedication to sustainability extends beyond the kitchen; the bar team collaborates closely with the chefs to repurpose surplus ingredients, such as peels, stalks, and stems, into inventive cocktails, minimizing waste and maximizing flavor.
Looking ahead, the ION Harbour team is planning to enhance their sustainability efforts by establishing their own organic growing operation near the restaurant.
