Sustainable gastronomy and innovative culinary artistry have earned Aulis Phuket its first Michelin star, marking a significant achievement for British chef Simon Rogan’s latest venture in Thailand. The prestigious accolade arrives less than twelve months after the restaurant’s December 2023 launch at the distinguished Iniala Beach House on Natai Beach.

The intimate 15-seat chef’s table concept has rapidly established itself as a beacon of excellence in Thailand’s gastronomic landscape. Under the guidance of Executive Chef Oli Marlow and Head Chef Charlie Wilson, the establishment seamlessly integrates cutting-edge culinary techniques with hyperlocal sourcing practices.

“Aulis as a concept allows us such creative freedom, where we can immerse ourselves in perfecting dishes and then passing on that knowledge and passion to diners in an intimate setting. Winning a Michelin star less than one year after opening is not only a huge honour, it is testament to the team’s dedication and hard work, as well as the ongoing success of our partnership with Iniala.”

The restaurant’s commitment to sustainability extends beyond mere philosophy into practical implementation. Strategic partnerships with local producers, including Farmer Family’s organic farm in Paklok, ensure exclusive access to premium ingredients. The cultivation approach encompasses on-site growing beds at Iniala Beach House, while collaborations with Catch & Co provide sustainably sourced seafood, and ArunSupa Farm supplies antibiotic-free Thai Wagyu.

Operating five evenings weekly, Tuesday through Saturday, the restaurant’s sophisticated waste minimisation programme demonstrates exemplary environmental stewardship. The culinary team employs comprehensive preservation techniques, creating vinegars, salts, syrups, and pickles, while ensuring remaining organic matter serves agricultural purposes through composting or animal feed.

The dining experience extends beyond exceptional cuisine to include thoughtfully curated beverage selections. Guests may opt for traditional wine pairings or explore innovative non-alcoholic alternatives, each designed to complement the menu’s nuanced flavour profiles.

To commemorate this culinary milestone, Iniala Beach House has crafted an exclusive two-night package. The offering includes luxury accommodation in either The Lotus Suite or The Boudoir Suite, complemented by daily breakfast, therapeutic massages, and dining experiences at both Aulis Phuket and Anaalā Thailand, with seamless airport transfers completing the premium experience.
