At the helm of this ambitious project is Olivier Limousin, an acclaimed Michelin-starred chef who brings his visionary approach from New York to Bangkok. Limousin’s focus on blending culinary innovation with immersive dining experiences makes COBA a standout addition to the city’s luxury dining landscape. Executive Chef Sebastien Lalanne, known for his work in Michelin-starred kitchens, will oversee the kitchen, bringing his extensive expertise in French cuisine to COBA’s dynamic menu. Having previously maintained Michelin stars in Europe, Lalanne’s vision is set to push the boundaries of traditional fine dining with bold, inventive flavours that will define COBA’s signature style.
The menu at COBA is a celebration of both global and local influences, merging Latin American ingredients with refined French techniques. This is fine dining reimagined—vibrant and alive, like the city of Bangkok itself,” van der Westhuizen said. The restaurant’s rainforest-inspired interior is designed to evoke both exclusivity and warmth, reflecting the hospitality for which Thailand is known.
