On the enchanting Mediterranean island of Gozo, where time seems to stand still, there exists a gastronomic haven that beckons travellers seeking an extraordinary dining experience. L-Istorja, the flagship restaurant of Kempinski Hotel San Lawrenz, is more than just a dining establishment—it’s a captivating journey through the rich culture of Maltese and Gozitan cuisine, infused with global influences, all within the luxurious embrace of a 5-star hotel.

A Culinary Exploration in Paradise

Nestled within the luxurious vacation ambiance of Kempinski Hotel San Lawrenz, L-Istorja epitomises the essence of fine dining. Whether you choose to dine under the open skies or within the stylishly designed indoor spaces, guests will embark on a culinary odyssey that tantalises the senses and leaves an indelible mark on the palate.

The genius behind this epicurean adventure is Trevor Portelli, the Culinary Director of Kempinski Hotel San Lawrenz, and his team of versatile chefs. Portelli’s vision is clear: to elevate the traditional local cuisine of Malta and Gozo to new heights, infusing it with passion and creativity while serving it as refined gastronomy in an elegant setting. The result? A mesmerising menu that celebrates the distinctiveness of Maltese and Gozitan culinary heritage.

A Symphony of Flavours

The new summer menu at L-Istorja tells a story of centuries-old culinary traditions intertwined with the global influences left by settlers from Italy, France, Spain, Arabia, and Britain. Every dish is a testament to Portelli’s dedication to honouring the past while embracing innovation, perfectly executed by Head Chef Nick and his team.

Begin your culinary journey with a vegetarian, French-inspired “Terrine” or try the elegance of Belgian caviar. But a surprising twist on a traditional staple is the Mango, Hummus & Falafel. Discover the finely roasted carrot hummus, topped with crunchy chickpea falafel, perfectly married with mango & red pepper salsa. Another starter that must be experienced is the Seared scallops – perfectly cooked to melt in the mouth, accompanied by a delicate and tasty cauliflower & saffron purée, topped with a crunchy almond crumble, finished with pea oil and a delightful lime gel reduction.

For mains, the pasta dish, aptly named Caramelle, reimagines a classic Italian with a fresh perspective. Here you’ll find traditional handmade parsley dough, a light rabbit filling enclaved in Gozo cheese fondue, decorated with a hearty rabbit jus along with confit tomatoes and gbejna praline. Those with a larger appetite may opt for the pistachio & coriander crusted duck breast. Paired with a rich beetroot purée, field carrots and wild spinach, with a perfect portion of cherry jus. This generous plate is compelling in its flavours, and utterly satisfying. Cooked to perfection with a pink centre, the plump duck breast is distinguished and hearty.

Another interesting dish is Purple Octopus (which gets its colour from the purple cabbage in which it is cooked), served with rice blackened from the ink, topped with chorizo crumble and paired with saffron aioli and smoked paprika oil. An exceptional dish which is a must for fresh seafood lovers. These dishes are not merely plates of food; they are a taste of history and heritage, served with a creative twist.

Save room for dessert, for it’s here that L-Istorja reaches the pinnacle of sweetness. The Gozo Gbejna, a beloved local sheep’s cheese, is transformed into an exquisite mousse with pear gel, set upon a carob base, drizzled with organic lemon oil, and garnished with pistachios and sweet bread. It’s a culinary masterpiece that dances on the palate, a sweet ode to Gozo’s culinary heritage. It’s easy to see why this is the signature desert, but there’s plenty more to choose from. A particular favourite is the Mascarpone & Limoncello Mousse – a white chocolate ganache topped with a pistachio shortcrust, delicate lime crumble and fresh crispy mint leaves.

A Gastronomic Heritage Unveiled

Ruth Abellan, the General Manager of Kempinski San Lawrenz, aptly describes L-Istorja as an “authentic gastronomic experience.” It’s a place where guests embark on a journey through the history of the Maltese Islands, where every dish tells a story, and every bite is a revelation.

Under the dedicated stewardship of Trevor Portelli and his culinary team, L-Istorja is more than a restaurant; it’s a celebration of tradition, innovation, and exquisite flavours. It’s a place where the past and present converge in a symphony of taste and aroma, where every meal is a memory waiting to be cherished.

As you savor the culinary creations at L-Istorja, you’ll not only indulge in delectable dishes but also experience the rich cultural heritage of Gozo and Malta. It’s a journey that transcends the ordinary, a true gastronomic adventure set against one of the most incredible backdrops.
