In the evenings, guest were able to visit The Vale for a full dining experience curated by one Michelin-starred Labombe by Trivet, the restaurant founded by chef Jonny Lake and Master Sommelier Isa Bal. Signature dishes included grilled lamb rump with bulgur wheat, baby gem and peas; wild seabass crudo with orange ponzu and anchovy garum; and the celebrated Hot Tongue Bun, alongside exclusive creations developed specifically for The Vale. Isa Bal curated a wine pairing for each dish, while a dedicated patisserie counter offered desserts including Hibiscus macerated strawberries with goat’s curd and sumac.
